A major reason why operators struggle to calculate accurate food costs is a failure to account for product yield. Yield is the usable amount of a product after it has been prepped, trimmed, or cooked. If you buy a ten-kilo sack of potatoes, you cannot sell ten kilos of chips. You lose weight to dirt, peels, eyes, and end cuts. A good yield on whole potatoes might be eighty percent. The strategy for Dogs is brutal but necessary: eighty-six them entirely. Remove them from the menu, streamline your operation, and do not look back.

The rapid expansion of online ordering and third-party delivery platforms has introduced a massive new revenue stream for restaurants, but it has also created an operational nightmare. A healthy, profitable restaurant must keep its Prime Cost below sixty percent of total gross revenue.
